Sticky Toffee Pudding

Combine in a bowl:

6 oz pitted dates
1 cup hot water
2 tsp baking soda

Mash up dates until mixtures is thick. (An immersion blender works really well.)

Combine in a separate bowl:

4 tsp butter
3/4 cup sugar
2 eggs
1 cup flour
2 tsp vanilla
2 tsp baking powder

Mix together. Add date mixture. Pour into greased square pan 9” x 9”.  Bake at 350 degrees for 40-50 minutes.

Toffee sauce - Combine in a sauce pan:

1 cup butter
3/4 cup brown sugar
3/4 cup whipping cream

On medium heat, bring to a boil and let simmer for a few minutes.

When cake is done, stab many holes in the top. Drizzle sauce over top so it sinks into the cake. Serve warm and topped with more toffee sauce.
